10:31 p.m. Veal Morbisian …

Thought I’d share a cheap idea for a good meal with ya folks !! … I’ll put it Morb’s Menu later …

Ingredients:

4 veal cutlets (about 1 pound)

salt , pepper , oregano , garlic

1/2 cup all-purpose flour

8 ounces sliced Mozzarella cheese

1 cup ramano cheese seasoned bread crumbs

1 egg , beaten

olive oil for frying

4 tablespoons of garlic tomato sauce

Preparation:

Sprinkle cutlets with salt , pepper and garlic. Dip cutlets in beaten egg , then drag them , both sides , thru the flour … To allow the egg to cling to the meat … Then drag ’em again thru the seasoned bread crumbs …
Place on plate and then deal with all the slime and bread crumbs you now have stuck on your digits !!! …

In a large frying pan , pour a ‘ bottom surface covering ‘ amount of olive oil and heat it about 7 on the dial … When oil has heated to desired temperature , place breaded cutlets into hot pan , CAREFULLY ! … Thereby avoiding getting hit with said hot oil !!! Bin there !!!! … Fry for about 4 minutes on each side , or until browned … Keep an eye on it folks !! … There’s a slight window between ‘ brown ‘ and ‘ BURNT ‘ !!! … Bin there too !!! … NOT GOOD !! … Ya have to open windows !!! …

When they are done nicely brown … Place cutlets in baking dish … Spoon tomato sauce over and sprinkle with oregano … Place Mozzarella slices over cutlets , then pour the excess olive oil from the frying pan over the whole thing …

Cover with foil and place in the oven and bake at 275° for 10 to 15 minutes to nicely melt the cheese and allow the olive oil to creep in from the top …

You can serve with salad , pasta , rice … Or simply place it on a warmed or toasted , fresh style of bread , French stick or Kaiser , and serve as a sandwich …

TURNED OUT DAMN GOOD !!! …
